This isn't really a recipe, its more of a tool to use up all those little left over bits most of us have in the fridge towards the weekend. I looked in the fridge last night and had a few olives, couple of anchovies, some capers, few pieces of salami, some mozzarella, basil, pesto etc .... so thought PIZZA!!!

This is the ingredients I had last night, but it is completely your choice of what you put on your pizza.
 
1 Quantity Pizza Dough or Pre-bought Pizza Base
5 Tbsp Tomato Passata
1 Ball Mozzarella, sliced
50g Pecorino, grated
5 small plum tomatoes, sliced
12 sun dried tomatoes
4 slices salami, torn
2 slices proscuitto, torn
8 olives, halved
10 Anchovies
3tbsp pesto
2tbsp capers
pinch dried chilli
few basil leaves
dried oregano
olive oil


Pre-heat oven to 220 centigrade/ Gas Mark 6

Roll out pizza dough to form a large 12 inch circle, place dough in a pre-oiled pizza tray or on a floured pizza stone.

Dollop passata onto centre of the dough and use a spoon or ladle to spread over the base, leaving a good 1 inch crust around the outside.

Place the sliced mozzarella over the passata, then scatter the rest of the ingredients over the top finaly sprinkle the oregano and grated Pecorino over the top.

Drizzle with oil and cook in the pre-heated oven for 20 minutes or till dough becomes cooked and golden.


Remove from oven and eat straight away
