Homemade Fusilli Lunghi with Courgette,
Tuna and Lemon
100g courgette, sliced thin like spaghetti
chopped flat-leaf parsley
2 garlic cloves, sliced
tin good quality tuna
150g homemade fusilli lunghi
juice 1 lemon
chopped parsley
salt and pepper
olive oil
Put
a pan of water on to boil.
Put
a large pan over a medium heat and add the garlic and saute for a
couple of minutes without colouring.
Add
the courgette and saute for a few minutes till soft then add the tuna and lemon juice and warm through.
Put salt into your boiling water and add the fusilli to cook it should only take around two minutes.
Once your pasta is cooked, remove it from the water and add to the pan. Add the parsley and a little olive oil, season then toss for a minute or two to coat the pasta. Serve straight away.
