Penne Pasta With Anchovy And Tomato




1 garlic clove, crushed
1 red chilli, finely chopped
4 anchovies
10 cherry tomatoes, chopped 

50ml passatta
small handful of flat-leaf parsley leaves
150g dried penne pasta

grated Pecorino
olive oil

Put a pan of water on to boil. once boiling put a couple of pinches of salt into your boiling water and add the penne to cook.
 
Add a good glug of olive oil to a frying pan over a medium heat, then add the anchovies, garlic and chilli, cook and stir for a couple of minutes , till the anchovies begin to dissolve, then add the tomatoes and passatta. Stir for a couple of minutes and let cook till your penne is ready.

Once your pasta is cooked,
add it to the pan along with the parsley leaves. Stir or toss for a minute or two to coat the pasta
 
Serve right away topped with grated Pecorino.
