4tbsp olive oil
2 garlic cloves, crushed
3 spring onions, finely chopped
150ml white wine
125g sun-dried tomatoes, drained and chopped
6 anchovies, chopped
150ml fish stock
Salt and pepper
Heat a glug of olive oil in a pan, sauté the garlic, onions, sun-dried tomatoes and anchovies for 3-5 minutes stirring regularly.
Stir in the wine and stock, bring to the boil, reduce to a simmer and cook for 10 minutes till reduced.
Check seasoning.
Serve with pasta.
