Calbrian Salami Pizza with Chilli and Wild Rocket

This is a quite spicy pizza, if you use 'Nduja it will be even more spice, if you want to you can leave off the red chilli or de-seed the chilli before using it.



1 Quantity Pizza Dough or Pre-bought Pizza Base
5 Tbsp Tomato Passata
1 Ball Mozzarella, sliced
50g Parmesan, grated
100g Calabrian Salami, such as Sopressata, Capocollo or 'Nduja, torn into pieces
10 cherry tomatoes, quartered
1 red chilli, fine sliced, with seeds
dried oregano
handful wild rocket
olive oil

Pre-heat oven to 220 centigrade/ Gas Mark 6


Roll out pizza dough to form a large 12 inch circle, place dough in a pre-oiled pizza tray or on a floured pizza stone.


Dollop passata onto centre of the dough and use a spoon or ladle to spread over the base, leaving a good 1 inch crust around the outside.


Place the sliced mozzarella over the passata, then scatter the torn Salami and tomato pieces over the top. Sprinkle the oregano and grated Parmesan over the top.


Drizzle with oil and cook in the pre-heated oven for 20 minutes or till dough becomes cooked and golden.


Remove from oven scatter with wild rocket leaves.




Then cut and enjoy.
