Torta di Pera (Pear Sponge)


Torta di Pera

200g self-raising flour
1tbsp baking powder
200g sugar
3 eggs
4tsp vanilla extract
130ml whole milk
100g butter, at room temperature
3 ripe pears, peeled, halved and core removed
icing sugar for dusting


Line a fluted plan tin with greaseproof paper.
 
Preheat oven to 180 centigrade/ gas mark 4.
 
Place flour, baking powder sugar, eggs and vanilla extract in a large bowl. Pour in milk and whisk to a smooth batter.
 
Add the butter and continue to whisk till everything is smooth and well mixed together.
 
Pour the sponge mixture in the lined tin then arrange the pear slices on top, gently pushing down into the mixture.
 
 
 
Bake on the middle shelf for 28 - 30 minutes until golden. Then remove from oven to cool.
 
 
 
Once cooled dust with icing sugar and remove from tin.
