1tsp vanilla extract
300g fresh cream
2tsp baking powder
Pre-heat the oven to 180 centigrade/ Gas Mark 4.
Butter a ring-shaped baking tin.
Mix the eggs and sugar until they are light yellow and fluffy. Then mix in the baking powder gently, trying not to knock out to much of the air.
Add the cream gently and mix in well.
Then gently fold in the salt and flour, bit by bit, until completely mixed in and you have a smooth cake batter.
Pour the batter into the ring and bake for 40 minutes, test with a cake skewer, if it comes out clean with nothing stuck to it.
Cool for 10 minutes then turn out.
