Linguine with Anchovies and Breadcrumbs


 
 
Linguine with Anchovies
and Breadcrumbs

2 garlic cloves, sliced
10 anchovy fillets
handful fresh breadcrumbs, baked in oven or toasted ina dry pan
150ml white wine
150g dried linguine
salt and pepper
olive oil



Put a pan of water on to boil. .
 
Put salt into your boiling water and add the linguine to cook.
 
Place a pan over a medium heat, add  garlic and anchovies, cook for a couple of minutes then add the wine. While the wine is reducing stir the anchovies and they will begin to dissolve and leave a brown sauce in the bottom of the pan, if it is a little dry add a spoon full of the water that your pasta is cooking in.



Once your pasta is cooked add it to the pan along with the breadcrumbs. Stir or toss for a minute or two to coat the pasta.
 
Serve right away.
