Salsa Verde

Salsa verde, means literally green sauce. Salsa verde is a great accompaniment to roast meat and fish dishes. You can make it in a food processor, but I prefer to chop everything by hand which gives you a more rustic home made look.

80g parsley, chopped
50g capers, chopped
1 anchovy, chopped
1 egg yolk, hard boiled then chopped
75ml olive oil
1tbsp white wine vinegar
sal and pepper

Mix all ingredients together in a bowl and stir well together.

* If you want a thicker salsa verde add a handful of breadcrumbs to the mixture and stir together well.
