Spaghetti Cacio E Pepe (Spaghetti With Cheese & Black Pepper)

150g spaghetti
25g Pecorino, grated
freshly ground black pepper

Bring a large saucepan of water to the boil, once boiling add a couple of good pinches of salt to the water then when it returns to the boil add your spaghetti to cook.

Place the grated Pecorino in a bowl, then when your spaghetti is cooked remove it from the pasta water add add to the pecorino along with a couple of tablespoons of the pasta water and toss well till the hot water melts the Pecorino and forms a sauce which coats the spaghetti. Then add a couple of twists of freshly ground black pepper and serve.
